i take breakfast seriously. i eat within ten minutes of waking up and cannot tell you the last day i skipped the meal. that’s not something you hear often from a college student. today i opted for a smoothie bowl. and a festive one at that.
this was made in under four minutes. i added these things together in my blender:
half of a frozen banana, sliced
1/3 cup frozen blueberries
2 handfuls baby spinach
1 scant scoop plant protein powder
1 cup almond milk
and then topped the smoothie with a sprinkling of shredded coconut and some pomegranate seeds for good measure.
with a cup of black coffee, a heaping spoonful of sunflower seed butter (not pictured), and a side of natural sunlight, i was more than ready to start my day.
