BREAKFAST: A classic — two slices of cinnamon raisin Ezekiel bread, topped with creamy almond butter, banana coins, unsweet shredded coconut, cinnamon + a drizzle of honey. That’s all, folks.

LUNCH: A casual lunch to remember with my mama in NYC. I went for a kale / pomegranate / dried cranberry / toasted hazelnut salad and also shared a tuna sandwich — blurred in the back — on super doughy (in a good way), white bread at Dean & Deluca.

DINNER: A perfect meatless Monday meal in my book. No recipe necessary. Just crispy tofu cubes, sautéed cabbage, mushrooms, yellow peppers and onions, shaved carrots, toasted almonds and sesame seeds on top of brown rice. Oh, and a messy almond butter drizzle on top. You know, for good measure.

DESSERT: When dinner includes veggies and brown rice, dessert should probably include a taste of the cookie of all cookies from Levain Bakery. Above is their classic chocolate chip walnut flavor. If you’re in the neighborhood, go early and expect a line. I promise it’s worth it.
